Cho tỏi ớt băm nhuyễn, sả hành tím băm nhỏ, 60ml nước mắm, 60g đường và 1 muỗng cà phê tiêu 2 muỗng dầu ăn vào chén, khuấy đều cho tan đường.Thịt cốt lết rửa sạch để ráo rồi thả thịt vào ướp với nước sốt 3 tiếng hoặc qua đêm cho thấm.
Sau đó lấy thịt ra, chi vào lò nướng ở 200 độ C từ 20 - 30 phút. Để biết miếng thịt đã chín hay chưa thì bạn dùng xiên, xiên vào trong thịt nha, nếu thịt mềm không còn màu đỏ là chín. Phần nước sốt ướp thịt còn dưa bạn cho vào nồi nấu sôi, thêm hành lá vào trộn đều và cho ra chén làm nước chấm.
